Garnet-purple color. Lovely complex nose revealing roses, chocolate, blueberries and blackberries perfumes along with scrubland and smoke notes. In the mouth, this wine is fresh with a mineral profile.

Risotto with ceps, leg of lamb, fillet, doe stew, mutton chops.

A very fine, polished 2017 with chocolate, walnut and spice. Just a hint of raw meat, too. Medium to full body, silky tannins and a savory finish. Orange peel, too. A blend of 81% cabernet sauvignon and 19% merlot. Needs two or three years to soften.

THE WINES OF PAUILLAC
The wines of Pauillac are wines of sustained color. These wines are powerful and structured, in particular thanks to the blend in which the Cabernet Sauvignon expresses its strength. The resulting tannic structure gives these wines a remarkable aptitude for aging. The addition of Merlot gives Pauillac wine roundness and fruit. After a period of aging, these wines develop a bouquet of great complexity.
